We have selected an exclusive variety of cheeses to be part of our catalogue, which only contains artisan cheeses, not industrial ones.

In addition to the cheeses from the province of Cádiz, we have added to the catalog some prestigious brands from another part of the country (such as Manchego cheese) with varieties of cured sheep's cheese and cured goat's cheese.

Payoyo cheese

Quesos payoyo, cuñas de queso artesano de la Sierra de CádizThey are produced from the raw material produced by the famous payoya goat and merino sheep (protected and native species of Ronda and Sierra de Cádiz), specifically in the Sierra de Grazalema areas, and in the towns of Villamartín and Villaluenga del Rosario. Its ability to adapt to a harsh environment makes its milk of distinguished quality.

Variety is the spice of life

In the curing process, natural products are usually added to enhance or accompany the flavor of the cheese. Some examples: olive oil, rosemary, paprika, butter, wheat bran (the famous emborrado cheese)... Each one adds a different subtlety and the aromas are enhanced in a different way, which makes eating cheese a more enjoyable experience. enriching.

Types of milk

Sheep's milk cheese tends to have a softer and creamier smell and taste, goat's milk cheese is more intense... if you can't decide at all, you can opt for the cheese that is a mixture of both milks. The mixed cheese seeks a balance between both flavors.

The curing

The curing of the cheese influences the amount of water: during the curing of the cheese, it loses water, hardening and accentuating its flavor. Old cheese is the one that has the longest curing time, even reaching 8 months. Its flavor is more intense and it crumbles when cut. The cured cheese is strong, with a maturation of 3 to 6 months; and is usually preferred by most cheese lovers. And the semi-cured cheese has a milder flavor and a softer texture, it has been cured for less than 3 months.

Among the cheeses to highlight are the emborrado cheese, with rosemary and paprika, cheese made with butter or olive oil.

We send the cheeses vacuum packed for better transport, or wrapped in protective paper. You can request it whole or in 2 or 3 parts. If what you want is to try a little before deciding which cheese to buy, you can try a wedge that, depending on the brand and presentation, can weigh between 200 gr and 600 gr.
