Serrano Ham

Serrano ham is obtained from white breed pigs. To further differentiate it from any other Iberian ham, remember that white pigs are not fed with acorns. The diet of these animals is mainly based on feed, and sometimes chestnuts.

There is a deep-rooted custom of curing hams in high mountain areas, places with low temperatures where curing is easier, which is why this product is called "serrano". To distinguish it from cooked ham, any cured ham is called serrano, especially in some European countries; which can lead to the typical confusion of Iberian ham with serrano ham.

According to the designations in article 21 of Royal Decree 474/2014, dated June 13, regarding the quality regulations for meat products, cured Serrano ham has three designations, which are differentiated by the curing time:

Jamón Bodega: cured for 9 to 12 months,

Jamón Reserva: cured for 12 to 14 months, and

Jamón Gran Reserva: cured for 15 months or more.

This marks a key difference with Iberian ham, since the latter needs to be cured for more than 20 months.

The hoof of the Serrano ham is white, and the color of the sliced ​​ham is pinker than the Iberian ham and less shiny, since the Serrano ham does not have infiltrated fat like the Iberian ham.

The Serrano ham has a milder flavor, a characteristic that Serrano ham lovers appreciate; while the Iberian ham has a more intense flavor, with more aromas and nuances, with the acorn-fed ham being the most distinguishable.
