The expert cutters at La Casa del Jamón are in charge of selecting the field-fed ham and obtaining the taco after boning a whole piece, and then vacuum-packing it. The Iberian ham block is cleaned of the rind and a layer of bacon is left on it to preserve its juiciness and not dry out.

The Iberian ham tacos are usually cut later in a special charcuterie machine. This format is usually the one chosen by bars and restaurants for machine-slicing portions for breakfast and tapas, and even by chefs.

The Iberian ham block is easy to preserve and cut if you have the appropriate machine. The whole ham has to be sliced ​​with a knife and it is more complicated to make good use of it.
