In addition, every year contests and contests are organized where they compete for excellence in food production from around the world. These contests award prizes that translate into more impact for the winners, who can display their achievements in their respective packaging and give their brand more notoriety.
The Protected Designation of Origin (D.O.P.), ham with D.O.
In Spain there are several regions whose Iberian hams and shoulders hams are covered by the Protected Designation of Origin of that specific geographical location. Since each region has a particular climate and each brand has exclusive traditional methods, they can be distinguished by flavor or bouquet. In addition to being pieces from pigs fed exclusively with acorns and from a 100% Iberian pig breed, the hams and shoulder hams are subjected to a laboratory study that measures, among other things, the amount of a nutritional component, oleic acid, present in the fats. Only those that present a percentage higher than a specific measure of this nutrient are marked as pieces with Denomination of Origin (D.O.).
The Denomination of Origin Jabugo
The Denomination of Origin of Jabugo, in the province of Huelva, is one of the most recognized. Jabugo hams are made in a geographical area that includes 31 municipalities. Only these hams, made in the cellars registered in the registry, are recognized as Jabugo hams. The pigs are raised in pastures found in Seville, Huelva, Cádiz, Córdoba, Málaga, Cáceres and Badajoz. The cellars are located in the Sierra de Aracena and Picos de Aroche Natural Park.
The Guijuelo Denomination of Origin
In the Salamanca province are the cellars that are covered by the Denomination of Origin of Guijuelo. The main characteristic of these hams is that they spend more time in the dryers, at a high altitude, so they need less salt to reach their optimal curing point. Therefore, its flavor is sweeter.
