Osborne Very Old Rare Sherries are a treasure inherit from years and years of patience, devotion and hardworking. The complexity and soul of these wines are unique and unparallel. The Solera of this wine was set in 1830, and has an average age of 30 years.

he Palomino grapes are gently harvested by hand and carried in small boxes to avoid damages to the grapes. Then, they are softly pressed, followed by fermentation at a controlled temperature of 24ºC/75ºF.

Once the wine achieves 11%-12% vol., wine spirit is added up to 17% vol.

The fortified wine is then transferred to 500 litre American oak casks, where ages through the unique system of Soleras, for 30 years average. The special microclimate in El Puerto de Santa María, where our winery is located, allows this oxidative aging process to occur smoothly, imprinting its marvellous personality to the wine.

ORIGIN: D.O. Jerez-Xerès-Sherry. Located in Andalucía, South of Spain.

BLEND: A selection of the finest Palomino grapes from the best Pagos of the Sherry Triangle.

SENSORY ENJOYMENT

- Look: Lovely brilliant amber color with green highlights.

- Aromas & Flavours: Intense and complex with subtle yeasty nuances from its biological aging. Dominant yet elegant oak notes, evoking vanilla, almonds and roasted nuts. Very dry, full bodied and round. Flavours of walnuts, marzipan and hints of bitter orange marmalade mingled with spicy oak. Very persistent.

Serve it slightly chilled. Perfect as and aperitif or after a good meal. Enjoy it also on its own or alongside cured cheeses such as Manchego, Ideazábal or Parmigianino is fantastic.
