Corned León is a variety of cured meat that is produced in the province of León (Spain) with cow.

Its special features are:

  • Typical exterior appearance: the cecina will have a toasted, brownish, slightly dark colour, typical of the production process.
  • Colouring and appearance of the cut: when cut, the cured meat will have shades of colour, from a cherry to garnet colour, accentuated at the edges at the end of the ripening process, and will present a slight graining of fat, which will give it its characteristic juiciness.
  • Flavour and aroma: meat with a characteristic taste, slightly salty, with a low fibrous consistency. The effect of smoking gives the ripening process a characteristic aroma, supporting the set of flavours.
