Tolosa bean, better known as black bean. Medium-sized, oval grain, very full, almost spherical. Glossy black in color with a white pint on each grain. Once cooked, the grain is buttery and the resulting broth is dark. It is a source of fiber, vitamin B, minerals, carbohydrates and proteins. Highly appreciated in northern Spain, where it is even consumed only cooked and with olive oil as a dressing.
