The green lentil, also known as the green Puy lentil, is small in size, the same size as the brown lentil. The color varies between the grains, going from green, to yellowish green, to light brown. After cooking it remains whole without loosening the skin, with a creamy texture. It has a nutty aroma and a slightly sweet and spicy flavor. It comes from the French region Le Puy-en-Velay, now also cultivated in Castilla y León
