From an anatomical point of view, the ham is the piece from the hind limbs of pigs, including their entire musculoskeletal system and part of the fatty skin that surrounds it.
Jamones Lazo is a company, located in the heart of the Sierra de Aracena and Picos de Aroche Natural Park, more specifically in Cortegana. They have been making Iberian ham in an artisanal way since 1940.
Some dryers and cellars nestled in an enviable natural environment with excellent climatic, humidity and orientation conditions that make them perfect for the curing process of Iberian ham. The curing time of this Iberian ham is from 24 to 36 months.
The acorn-fed Iberian ham 50% Iberian breed is a unique product in the world, made in an artisanal way and from pigs raised in freedom in the Huelva dehesa, which gives the ham that extraordinary property of fat infiltrated with flavor and nuances.
