"Gran Reserva" Pajarete sheep's cheese with a natural rind, smeared with ochre-coloured olive oil, with the typical engraving of the old esparto grass foliage.
Its body is compact, toasted yellow/orange in color, where the presence of small eyes of mechanical origin can be noticed.
Hard cheese with a firm and brittle texture. Sweet and elegant taste. Mild aroma of caramel and dried fruits, with sweet touches in the aftertaste. High persistence.
