This cheese should be eaten at room temperature in order to fully enjoy all of its characteristics. For storing, keep it at the back of the refrigerator, wrapped in aluminium foil or cellophane. Remove the rind before eating the cheese. This is a firm, compact cheese whose colouring varies from white to yellowish ivory, with uneven and irregular holes throughout.
